Parmesan Sun-Dried Tomato Mashed Potatoes

- 1 pouch (29.5 oz) Idahoan® Honest Earth® CREAMY Buttery Homestyle® Mashed Potatoes with extra Butter & Milk
- 3 quarts hot water
- 1 quart half and half
- 4 ounces minced garlic
- 1 pound of grated parmesan
- 1 pound of sundried tomatoes
- 2 bunches of fresh basil
- Salt and pepper
- In a large bowl add the hot water and half and half. While whisking, add potatoes and combine. Allow to refresh for 2 minutes.
- While the potatoes refresh, add the remaining ingredients to a food processor and pulse to form a rough pesto.
- Once pulsed and ready, add the potatoes and mix well.
- Serve with your favorite dish.
