1 pouch (26 oz) Idahoan Honest Earth® Creamy Classic Mashed Potatoes with a hint of Butter & Sea Salt
3.5 qt of hot water
½ quart of pineapple juice
9 pounds of prepared pulled pork
1 quart of teriyaki sauce
1 pint of pineapple juice
2 pounds of pineapple chunks
2 pounds of red pepper
2 pounds of red onions
4 tblsp of olive oil
8 ounces of chopped scallion (for garnish)
Instructions
In a large mixing bowl combine the hot water and pineapple juice and whisk to blend. Continue whisking while adding the potatoes until combined and allow to refresh for 2 minutes. Hold hot for assembly.
In a skillet add the olive oil and sauté the pineapple until caramelized, then toss in the red pepper and onions, and cook until just tender. Hold for assembly.
Heat the teriyaki sauce and pineapple just to a boil, add the pulled pork, and heat to 175°F. Hold for assembly.
To assemble, add 5 ounces of the potatoes into a bowl, add 4 ounces of the pulled pork and finish by topping with 3 ounces of the pineapple and veggie mix. Garnish with chopped scallions.
