Mediterranean Beet Mashed Potato Bowl

Ingredients
  • 1 pouch (26 ounces) Idahoan Honest Earth® Creamy Classic Mashed Potatoes with a hint of Butter & Sea Salt
  • 1 gallon hot water (water should be between 190-200°F)
  • 4 pounds roasted beets
  • 2 cups of roasted mixed veggies – cauliflower, asparagus, onions, snow peas, beets
  • 1 pound feta cheese
  • 4 ounces chopped fresh basil
  • 1 tablespoon minced garlic
Instructions
  1. Place the water into a stand mixer bowl with a paddle attachment, add the water to the bowl and put unit on speed 1. Slowly add the potatoes to hydrate.
  2. Once the potatoes have combined, add the cooked beets and cheese. On speed 1 blend until fully combined and the beets are mashed but chunky.
  3. Build your bowl by adding 6 ounces of the beet mashed potatoes and top with the roasted vegetables.
  4. Finish with basil, garlic and feta cheese.
